(Click Read More to see full directions) FYI, I earn from Amazon affiliate link purchases. - Preheat oven to 400F - Get a big baking sheet and line with foil , dull side up - Place baking sheet in oven while preheating - Peel sweet potato and slice into 1/4in fries (try to get them all about the same size) - Place in a large bowl and toss with vegetable oil and season generously with salt , pepper , garlic powder , paprika - Take hot baking sheet out of the oven (with an oven mitt !) - Place sweet potato fries on hot  baking sheet , making sure none are touching - Bake for 10 minutes - Take hot  baking sheet out (with an oven mitt !) and rotate pan 180 degrees - Flip fries and make sure none are touching again - Put hot  baking sheet back in oven (with an oven mitt !) for another 8-9 minutes - Poke fries with a fork and look at the color to check for doneness - Turn off oven and open up the oven door, letting the fries sit in the oven while you finish prepa...
